This is a great easy appetizer that looks and tastes more impressive than it is time consuming. It’s a unique flavor combination, but pleases most palettes. Don’t make too many in advance, or the bread could get soggy. It could also work well in a large bowl in the center of a serving dish, surrounded by toast points, so guests could spoon on themselves.
1/3 cup dry red wine
1/4 cup balsamic vinegar
2 tablespoons cherry preserves (or other flavor)
2 cloves garlic, minced
1/2 teaspoon salt
pepper
1 1/2 pounds London broil
3 tablespoons finely chopped onion
1 teaspoon olive oil
2 teaspoons butter
French Bread
Either herbed cheese spread, or cream cheese and fresh herbs
Whisk first 6 ingredients, pour over london broil, marinade. Pour marinade into saucepan, add onions, bring to boil then reduce for 5-7 minutes.
Meanwhile, drizzle oil in pan, add butter, cook london broil medium rare.
Set aside on cutting board.
Slice French bread, drizzle with oil, toast
Either chop fresh herbs and cream with cream cheese, or spread herbed cheese on bread.
Slice london broil. Place a few pieces on each piece of toast, top with sauce.
